Happy Sunday. Today I wanted to share with you a super healthy and super yummy gluten free waffle recipe using WEDO Gluten Free Banana Flour.
If you are looking for an GREAT alternative to regular flour then Banana Flour
is the way to go! It has little to no taste, is light and fluffy and mimics the results of wheat flour… making for all-around healthy baking.
Did I mention it’s made of 100% all natural green bananas and full of natural vitamins and minerals? But the best part? There’s no sacrificing the taste you love! In fact, my husband could not even tell the difference between these and his favorite regular waffles (and he’s pretty darn picky). So whether you are gluten free or just trying to eat healthy, I recommend you try WEDO Gluten Free and these yummy banana flour waffles.
Directions:
In a bowl, mix the following dry ingredients:
1/3 C. Banana Flour
1/3 C. Rice Flour
2 T. Corn Starch
1 tsp. Baking Powder
1/2 tsp. Baking Soda
1/8 tsp. Xanthan Gum (available at most grocery stores in the baking aisle)
1 T. Sugar
Once the dry ingredients are mixed, add the following wet ingredients:
1 C. Buttermilk
2 T. Oil
1/2 tsp. Vanilla
1 egg
Mix until combined but don’t over mix. Then let the batter sit for 5 minutes before you add to the waffle iron.
