I think my absolute favorite time of year in Utah is when the leaves start changing colors and the temps begin to cool. You can usually catch the changing leaves towards the end of September and early October. 

My favorite thing is to take the girls for a little hike behind my parents home and search for their favorite fall foliage, including leaves, acorns and branches to make a dried fall bouquet.
